 SO…HOW DID SWEATING DONKEY HOT SAUCE GET STARTED?
Honestly? I blame Sean Evans.
Like a lot of people, I started watching Hot Ones on YouTube. I came for the interviews, stayed for the reactions…and somewhere along the way Sean Evans convinced me that I apparently needed an entire collection of hot sauces in my life.
Seriously, the guy could describe a bottle of hot sauce and suddenly I needed to know what it tasted like.
But after trying different sauces, something changed. I stopped thinking only about how hot they were and started paying attention to why they tasted good.
What peppers were being used? Why fruit in one sauce? Why smoke in another? How do you balance sweetness, acidity, spices and heat? And most importantly—could I make something I'd actually want to put on food instead of a sauce that's just trying to hurt you?
So I started experimenting.
A few peppers became a few recipes. A few recipes became bottles. Then came names, labels, characters and a slightly questionable number of donkeys.
And somewhere in the middle of all that, Sweating Donkey Hot Sauce was born.
The goal has stayed pretty simple:
 Flavor comes first. Heat comes along for the ride.
I want every bottle to taste different. I want you to actually taste the ingredients. And whether it's sweet, smoky, tangy, tropical, dilly or ridiculously spicy, it still needs to make the food underneath it better.
